200 g (7 oz) Farro, semi-pearled
200 g (7 oz) beans, boiled
200 g (7 oz) organic corn, canned
10 cherry tomatoes
The Juice of one lemon
10 olives, pitted
150 g (5 oz) Feta cheese
4 tbsp Extra virgin olive oil
Pinch of sea salt
- Cook the Farro in boiling salted water, according the instructions of the package.
- Drain the corn. Wash and cut the onions. Wash and cut in half the tomatoes and sprinkle with the lemon juice. In a bowl, combine, corn, cherry tomatoes, beans, olives, crumbled feta and drained Farro.
- Season with olive oil and salt. Stir to mix the ingredients together and serve.
