Polenta flan with Gorgonzola cheese is a tribute to one of the most famous Northern Italian dish.

Polenta is a traditional Italian dish, made from ground corn (corn meal). Born in Northern Italy, it belongs to the so-called “poor Italian cuisine”, made of simple, quality, genuine food. Polenta is a versatile, gluten free dish, cheap and easy to cook. It can be served with cheese, vegetables or tomato sauce.

This Polenta flan with Gorgonzola cheese is a very tasty idea, you can serve both warm or cold.

Serves: 8

Ingredients

1 liter (4.2 cups) water

Pinch of sea salt 

300 g (11 oz) ground corn, corn meal, precooked for polenta 

3 tbsp Extra virgin olive oil  

80 g (3 oz) Gorgonzola cheese

Method:

  1. In a saucepan, boil salted water. Add the pre-cooked polenta and cook according to the instructions in the package (about 10 minutes).
  2. Pour the polenta into the ramekins, oiled or covered with baking paper. Add the Gorgonzola, cut into cubes and cover and cover with another spoonful of polenta.
  3. Bake at 180°C (350°F/gas 4) for 30 minutes.
