This pasta with vegan zucchini sauce is made with onions, carrots and dried tomatoes. A fresh, summer dish, rich in nutrients and flavor.
Pasta with vegan zucchini sauce: Ingredients
3 sundried tomatoes
10 fresh oregano leaves
A bunch of parsley
3 tbsp Extra virgin olive oil
Pinch of sea salt
160 (5 oz) short pasta
Pasta with vegan zucchini sauce: Method
- Wash and cut the zucchini, onion and carrot. Blanch the vegetables in salted water.
- In a bowl, pour the vegetables, dried tomatoes, oregano, parsley, oil, salt and blend with the immersion whisk until you obtain a coarsely creamy mixture.
- Cook the pasta in boiling salted water and season with the zucchini sauce. Serve immediately.
