Orange vegan cups

Orange vegan cups are a delicious snack or healthy breakfast idea. A rich and nutritious breakfast is the most important meal of the day for me and, as such, I make sure that it is as varied and healthy as possible, alternating always different ingredients.

Yogurt cups, made with yogurt (vegan or traditional), are now a pleasant habit also for breakfast and not just for the afternoon break.

Rice yogurt, just like rice milk, is much lighter than yogurt made from cow’s milk. It helps digestion and, lactic ferments help to rebalance the bacterial flora, reinforcing our immune system. Rice yogurt is free of cholesterol, saturated fatty acids and gluten. Of course, you can replace or alternate it with soy yogurt, even if I try to consume few ingredients with soy because it is not always easy to find organic soy, not genetically modified.

In this recipe, so, creamy, gluten-free rice yogurt blends perfectly with crunchy almonds, halzelnuts and raisin. Oranges, caramelized with date syrup, served warm on the cups, are the sweet key of this seasonal, easy and quick recipe.

Orange vegan cups have everything you need to give energy, nourishment and goodies. Perfect to be alternated with seasonal fruit and homemade granola.

Orange vegan cups: Ingredients

Serves 4

250 g (9 oz) white rice yogurt

1 tbsp dates syrup

2 organic oranges

1 tbsp coconut sugar

4 tbsp white almonds, toasted and chopped

1 tbsp hazelnuts, toasted and chopped

1 tbsp raisin

Irange vegan cups: Method

  1. Stir the yogurt with a spoon of date syrup. Clean the oranges, cut and slices them. In pan brown them with coconut sugar.
  2. Pour half of the oranges on the bottom of the glasses, add 100 g of yogurt and 1 tablespoon of almonds, hazelnuts and raisins for each glass.
  3. Add the other half of the oranges slices and serve.
