Apple and honey cake: delicious and comforting as only homemade cakes can be.
I give a primary value to the substance of things, so the choice of ingredients is the base from which to start. As regards cakes, flours are the key. How do you choose your flours? Do you let yourself be fascinated by the known brand? Do you choose randomly? Whatever your choice, do not consider it to be of little importance.
Whole wheat flour is preferable because it is rich in minerals and nutrients. Some varieties of flours, sold as wholemeal, are not. They are simply white flours added with bran. A true wholemeal flour must contain all the components of the grain, including wheat germ. For this reason, it is true wholemeal flour only if the words “whole wheat flour” appear in the package.
Stone-ground flour is another added value. Although today, often, artificial stones are used, it is nevertheless a method that allows to obtain little refined flours. The grinding takes place at low speed, thus limiting the heating of the product and keeping its nutritional properties intact.
The white flours, unfortunately, are mostly obtained from ears genetically modified, in order to make them more productive. Moreover, they are added with chemical yeasts, bleached and mixed with saturated fats to facilitate the rotary movement of the mixers.
Flours are not all the same. Knowing them helps to choose if not the best, at least what we believe is such for us.
This delicious, apple and honey cake, gluten free, is made with the best organic flours and ingredients and with a delicious raw honey as sweetener.
150 ml (5 fl oz) cold pressed sunflower oil
80 ml (3 fl oz) almond milk, sugar free
5 tbsp raw honey
Pinch of sea salt
2 organic free range eggs
300 g (9 oz) brown rice flour, sifted
50 g (2 oz) cornflour/cornmeal, sifted
1 tsp baking powder
1 tsp ground cinnamon
2 red apples
- Preheat the oven to 180°C (350°F/gas 4).
- In a bowl, whisk with electric whip, the sunflower oil, almond milk, sugar, and salt until you get a clear cream.
- Add the eggs. With a spatula, add the sifted flours with baking powder and cinnamon.
- Wash and dry the apples, sliced. Pour the dough into a hinged and removable mold, covered with baking paper. Add the apples. C
- Cook for about 30 minutes
